Description: Harbor's Edge is an exceptional resort-style and
not-for-profit Continuing Care Retirement Community (CCRC) located
on the harbor in Norfolk, Virginia. Earlier this year Harbor's Edge
completed a $225 million expansion (https://vimeo.com/283999844)
called the River Tower, which includes an additional 24-story
tower, doubling the square footage, adding 147 residential living
units and 20 assisted living units. Harbor's Edge has 300
residential units in two Towers in addition to a small Skilled
Nursing unit and 80 Assisted Living/Memory Care units. The
Community employs approximately 300 employees. Current annual
revenues are approximately $30 Million. The Certified Dietary
Manager leads the Dietary Department, ensuring quality of all food.
He/she directs and assists the preparation and serving of regular
meals and therapeutic diets, orders food and supplies, maintains
area and equipment in sanitary condition, and ensures smooth
coordination with other nursing home departments.We are looking for
someone with leadership qualities who can supervise and secure the
cooperation of all dietary personnel. Candidates must have a basic
knowledge of dietetic principles, food sanitation, and food service
operation and must be able to work productively with other
department heads/personnel and dietary consultants. The ideal
candidate is a graduate of an approved dietary manager's course
that meets state and federal care regulations. If not a graduate,
candidates must be presently enrolled in a dietary manager course
or be enrolled within four months of the next approved dietary
manager course.ResponsibilitiesOversees food purchase, production,
and timely service of mealsDirects and supervises all dietary
functions and personnelPurchases food products from approved
vendorsMaintains cost records and works to meet budget
guidelinesHires, orients, train, counsels, disciplines, and, when
appropriate, terminates dietary employeesSchedules work hours and
assignments and reviews and checks staff work performance, ensuring
each shift is properly staffedDevelops job descriptions, cleaning
schedules, and other dietary management tools and checks in and
inventories incoming food suppliesEnsures that proper storage is
available and that handling of food and supplies complies with
current guidelinesProcesses new diet orders and diet changes when
received from nursing service and keeps diet cards updatedPlans and
helps prepare and serve holiday and special meals and
functionsVisits residents to complete initial nutritional
assessment and screening, explain diet, record food preferences,
and promote a quality food serviceVisits all residents at least one
time per quarter (residents at nutritional risk are visited weekly)
and documents all visitsParticipates in department head
meetingsEvaluates work performance and gives evaluations to dietary
employees and maintains the personnel records of dietary
employeesCoordinates dietary service with nursing service and
activities director, completing Nutritional Notes for all residents
at nutritional riskEnsures that food supplies are available for use
by dietary personnelChecks trays for accuracy before they are
deliveredMaintains the standardized recipes in which the recipes
are adjusted to the size of the facilityChecks diet orders that are
received against physicians' orders at least once a month and
notifies nursing of discrepanciesInspects Dietary Department
regularly to ensure that it is safe and sanitarySubmits written
reports to administration as necessaryPlans and presents in-service
education programs for the Dietary DepartmentInvestigates
on-the-job injuries and corrects the problem and/or retrains the
employee as necessaryEnsures continued compliance with all federal,
state, and local regulationsWorks with Dietary Consultant to
achieve quality food serviceUpdates dining room seating
chartMaintains current Care Plan for each resident through
interdisciplinary Care Plan meetings and updating when
necessaryMonitors the food intake of all residents and reports any
problems to the Dietary Consultant and/or Director of
NursingMaintains the security of the Dietary DepartmentKnows,
understands, and conveys to other dietary staff personnel the
federal and state rules and regulations regarding nursing home
dietary requirements and enforces them within the scope of the
Dietary DepartmentAttends in-service classes and staff
meetingsPerforms other duties as
assignedRequirements:QualificationsGraduate of approved dietary
manager's course that meets state and federal care regulationsHigh
school diploma/GED at a minimumExcellent verbal and written
skillsGenuine desire to work with the elderly and/or disabledAn
